Observador is a white wine made with 50% Albariño grapes and 50% Godello in the D.O. Rías Baixas by Bodega Davide. This blend comes from Finca Ofelia, situated in the heart of the Valle del Salnés. The orientation of the micro parcel favors the perfect ripening of Godello, complementing the vibrant acidity of Albariño. The vineyards are located on granitic soils, ideal for these varieties that thrive under water stress, intensifying their flavors. The winery's philosophy focuses on respecting the natural environment, with meticulous care taken in the vineyard. The varieties are vinified separately using natural techniques without additives to preserve the pure expression of each grape. Fermentation is carried out at 15°C with native yeasts, creating a complex aromatic profile. Additionally, there's a 9-month aging process in stainless steel tanks, with frequent bâtonnage of fine lees, followed by cold stabilization and additional resting in the bottle before release. Visually, it presents a pale color with green reflections, being bright and clear. Its nose offers a charming bouquet combining floral and fruity notes, complemented by a distinct mineral background. On the palate, "Observador" seduces with its delicacy and balance, offering flavors that fuse tradition and modernity. The wine's texture is silky, and its finish is characterized by being prolonged and refreshing.
