Fai un Sol de Carallo is an exceptional wine from the D.O. Ribeiro, crafted by Bodegas El Paraguas. This wine is primarily composed of native Galician grapes: Treixadura (88%), Godello (7%), and Albariño (5%). With a limited production of just 776 bottles, it has been carefully aged for twelve months in a new 600-liter Burgundy barrel made of French oak. This wine presents a beautiful straw-yellow color with golden hues. On the nose, it reveals a complex aromatic profile that combines wood aging notes with delicate spicy touches and hints of carpentry. As it develops, it captivates with citrus aromas of grapefruit and tangerine, perfectly integrated with notes of white fruits like pear and Conference apple, along with floral undertones and a mineral-salty background that reflects Galician character. On the palate, it is broad, complex, and has a very smooth entry. The journey is long and elegant, combining fruit and minerality with the notes typical of barrel aging. Aromas of white and citrus fruits, as well as floral hints, unfold throughout the subtle tasting. The aftertaste is long and leaves a pleasant memory that invites repeating the experience.
