Sidra Kane is an authentic organic cider from Menorca, handcrafted by David Fiol, a passionate supporter of cider tradition who decided to revive this culture in his native island. Using the local apple variety known as 'poma d'en Kane' as well as organic apples from Galicia, David has created a unique product that pays homage to the history of cider in Menorca, a drink that was imported in large quantities during British rule in the 18th century for the welfare of troops.
The production process begins in September when over 8,000 kg of apples are harvested from Menorca’s farms. After careful selection and cleaning, the apples are crushed and pressed to extract the juice, which is then filtered before fermenting in traditional tanks. This artisanal production approach not only results in a high-quality cider, but also aims to revitalize apple cultivation in the region. In this sustainable process, apple waste is donated to local farmers for use as fertilizer or feed. With about 4,000 liters produced, Sidra Kane is already becoming available in various venues in Menorca, where it is recommended to pair with the famous Mahón cheese.
