The district of Espirito Santo do Pinhal, better known as "Baixa Mogiana" - located in the heart of the state of Sao Paulo - has an average altitude of about 900 meters ranging from 800 to 1300 meters above sea level. The average temperature of the region is 20°C, with abundant rainfall and very fertile soil ideal for agriculture, and in this case for coffee. This favorable climatic situation has been exploited by the population of Pinhal to plant coffee - one of the main sources of wealth in the region. The annual production is around 300,000 bags of 60 kg with an average productivity of around 25 bags of 60 kg per hectare. 100% of the coffee produced in the region is Arabica, with 80% processed by the Natural drying method and 20% by the Semi-washed method, better known as "Pulped Natural". The harvesting method is mostly manual, with mechanized harvesting reaching 30%, focusing on the months from May to September. The botanical varieties of the region are Bourbon, Catuai, Mundo Novo, Icatu, and Obata. But the most widespread is Mundo Novo with about 70% of the production. In addition to coffee, this region is well known for the machinery factories related to coffee and its process, such as "Pinhalense". As for the unique coffee, it is a very carefully processed coffee, with a manual selection of ripe cherries (which favors the appearance of greater sweetness) at an altitude of about 1,100 meters (which will positively influence the acidity). It is mostly Natural coffee, with a percentage of Semi-washed, always maintaining a balanced cup profile and a silky body of medium to high intensity. Highlighting the aroma with sweet (caramelized) notes, hazelnut and ripe fruits, keeping them in the flavor.
