The White Wine Baetica Columella is an organic wine from a limited series, with a production of only 504 bottles. Made in Pago del Duque (Trebujena), it features a blend of 90% Palomino grapes and 10% Perruno grapes. Fermentation takes place naturally in ceramic dolium, using wild yeasts without temperature control. This production process includes 6 months of aging on the lees, followed by a bottling round that creates a fresh and balanced wine, with a light character and marked acidity.
The 2023 vintage gives the wine a straw color with green reflections and aromas of green fruits like apple and pear, complemented by citrus and nutty notes. On the palate, it has a smooth texture and a broad presence, ideal for pairing with appetizers, white fish, and rice dishes. It is recommended to serve it between 7 and 9 ºC to enjoy all its characteristics.
