Carbonera is a spicy paste made with Chipotle, dried and wood-smoked jalapeño, with tomato and Caribbean cacao, to which Sherry vinegar and a bit of thyme are added. It could be an interpretation of Mexican Mole with certain Andalusian touches, but it is undoubtedly one of the most robust sauces from Salsas Quietud.
Ideal for red meats, game, or Iberian meats, place it next to the meat and use it sparingly yet cautiously; it is smoky, with a hint of chocolate and Sherry… Don’t forget to put it on a burger.
