Pyjama Godello is a wine carefully crafted to represent the qualities of a variety with great potential in Bierzo. It combines the richness and structure of the Godello grape, along with the freshness and acidity of a unique vintage. This combination allows the wine to be stored in the cellar, and it is preferable to drink it after years of aging. Made with wild yeasts, it provides us with aromas characteristic of the variety, dry and serious but with great depth on the palate and a round but vibrant finish. Our goal is to harvest at the optimal state of ripeness to begin a controlled fermentation in stainless steel tanks, along with aging on fine lees in static for 5 months. Alcohol content: 12.82%
