The Uva Nocturna Garnacha Syrah is an exceptional red wine crafted by Bodegas Ejeanas, originating from the IGP Bajo Aragón. This wine is produced with a careful blend of 60% Garnacha and 40% Syrah, granting it unique complexity. The nocturnal harvesting technique is used to pick the grapes during the coolest hours of the day, thereby preserving the aromas and flavors. The production includes a cold pre-fermentation maceration, allowing for regulated fermentation times, followed by 6 months of aging in French oak barrels, complemented by at least 12 months of bottle rest. It presents a deep cherry red color, nearing dark, with an aromatic profile revealing dark forest fruits like blackberries, along with a spicy undertone of nutmeg. When swirling the glass, raspberry notes and a hint of vanilla from the wood emerge.
