The wine is made exclusively from Tempranillo grapes (also known as Tinta del País), sourced from vines aged between 15 and 30 years, primarily in the provinces of Burgos and Valladolid. The transformation of the grapes begins with a hand harvest that ensures the selection of the best bunches. Subsequently, fermentation takes place in stainless steel tanks with temperature control, ensuring the preservation of the aromatic purity of the grapes.
Once fermentation is complete, Corimbo undergoes aging for about 12 months in French and American oak barrels, followed by an additional maturing period in the bottle before reaching the market. This wine features an intense cherry-red color with violet rim, and on the nose, it is distinguished by deep aromas, predominantly ripe black fruits like blackberry and plum, complemented by notes of licorice, cocoa, and subtle spices, as well as balsamic undertones that provide freshness.
