Titiana Can Matons Chardonnay is a sparkling wine from the Denomination of Origin Alella, created by Can Matons in Santa Maria de Martorelles. This wine comes from a careful selection of Chardonnay and Pinot Noir grapes, grown in soils of 'sauló', known for their minerality and proximity to the Mediterranean. Harvesting is done by hand, followed by controlled fermentation. The highlight is its long aging on lees, which lasts approximately 120 months, providing exceptional aromatic and flavor complexity. In the glass, it presents an attractive straw-yellow color with golden reflections, along with fine and well-integrated bubbles. On the nose, ripe white fruits and autolysis notes from its prolonged aging stand out, including aromas of pastry, nuts, and toasted bread, all on a honeyed and spiced background. On the palate, its elegant structure and persistence make it an ideal companion for full-bodied dishes, including fatty fish, rice, and meats.
