Winemaking and aging:
The harvest is done manually and the varieties are destemmed and fermented in stainless steel tanks at a controlled temperature (25-29°C) for 17 days, with a post-fermentation maceration of 12 days. Then, the wine undergoes malolactic fermentation also in stainless steel tanks. The aging takes place for 8 to 12 months in second and third use French oak barrels, with periodic rackings.
