The white sparkling wine PURE The Winery is a sugar-free wine with 10.5% alcohol, made from Pinot and Chardonnay grape varieties in Piedmont, Northern Italy.
The wines of PURE are vegan. It is an achievement to certify that their wines are produced entirely free from animal-derived products. The low sulfite content is the result of the natural winemaking process, as the absence of sugars requires a lower level of sulfites for antioxidant purposes.
The grapes are cared for throughout the year to ensure a balance between ripeness and acidity at harvest time. After picking and selecting those in the best condition, the must is extracted. A small portion is cleaned and placed in tanks at 0 degrees. The remaining portion undergoes a slow fermentation process with controlled temperature to obtain a smooth wine. During the second phase, the wine is placed in pressurized tanks, the separated must is added, and thanks to special yeasts, the second fermentation is activated. After this process, the wine achieves its olfactory richness, and the residual sugar is completely converted into alcohol.
