On the palate:
Smooth yet full-bodied with the characteristic strength of the variety, with a characteristic bitterness and a spiciness that evolves into pepper on the tongue. Its aftertaste is long and very almond-like, leaving a slight astringency in the mouth.
Castillo de Canena is a family company with a long history in the world of extra virgin olive oil production. The estate is located in Jaén, and its olive trees are nourished by the Guadiana Menor River. All this in an unparalleled natural environment: Sierra Mágina, Sierra Cazorla, and Cazorla Natural Park.
To provide the oil with a sweeter, unique, and less spicy flavor, Fertigation is used.

Immediately after harvesting, the olives are taken to the mill, following a thorough safety protocol, thus preserving the flavor and aromas that this precious fruit offers us.
