This wine is made from grapes from the Wairau Valley and Southern Valleys, where stony soils and clays contribute to its unique character. Vinification is done through hand harvesting, whole bunch pressing, and fermentation in barrels with native yeasts. An 11-month aging on lees and a partial malolactic fermentation add complexity and creaminess, while maintaining its signature freshness.
