This Pedro Ximénez is an exclusive wine that has been aged for 40 years using the traditional solera and criaderas system. It is older than the VOS made previously. It is a unique and exclusive wine. Only 300 bottles were marketed in October 2014. The only winery in Jerez dedicated to wines with a long tradition and old sherries with the VOS and VORS qualification is Bodegas Tradición. This certificate was born with the aim of allowing to identify the quality and age of the wines , which is why in 2000 the Regulatory Council of the Jerez-Xeres-Sherry D. O. created these two categories. In this case, this Pedro Ximénez certified as VORS "Very Old Rare Sherry" translated as Selected Wine as optimal and exceptional is a real jewel in Bodegas Tradición and has an average age of more than 30 years. we recommend pairing it with cured and blue cheesesor alone.
