The grapes come from our vineyards, which are over 50 years old. They are plots of Tempranillo with traditional training in glass and free-standing, harvested by hand.grapes naturally, by the age of the vines and the small number of clusters of the same, is rich in both aromas and color , giving character and personality to our PHOENIX.we perform a process of double selection of the grapes , first in the field and then in the selection table. We then proceed to a cold maceration , days before starting the alcoholic fermentation. At the end of the alcoholic and malolactic fermentations, PHOENIX rests for 15 monthsin new French oak barrels , providing longevity and complexity to a tasty and fruity wine in the mouth.
