Finally available the new saca 2024 of Viña Corrales, the exclusive fino of Peter Sisseck (Dominio de Pingus) and Carlos del Río (Hacienda Monasterio) from their Bodega San Francisco Javier in Jerez. For Peter, the great white wine of Spain is Jerez.
It is born in a singular vineyard -which gives its name to the wine- of 8 hectares of palomino planted 30 years ago in Pago Balbaína, in one of the most appreciated historical vineyards of the Marco de Jerez.
After a long aging of 9 years using the soleras and criaderas system, the saca was made in May 2024, when the yeast that forms the velo de flor was most active, in a year in which the conditions for a particularly healthy biological aging have been met.
Limited edition of 8,000 bottles, to be enjoyed as a great white in a Bourgogne glass.
