Trispol is an organic and vegan red wine from Bodega Mesquida Mora, with V.T. Mallorca designation. It comes in a 75 cl bottle, 2023 vintage, with 13 % alcohol. It is made from 43 % callet, 40 % cabernet sauvignon and 17 % syrah. Its name means «soil» in Mallorcan and reflects the winery’s bond with the land. The varieties ferment separately and undergo post-fermentation maceration tailored to each grape. After racking, malolactic fermentation takes place in stainless steel tanks. They are then blended for 12 months of aging in a 5000-liter vat and 225-liter French oak barrels. The vineyards are farmed biodynamically and certified by the Consell Balear d’Agricultura Ecològica. They comprise eight plots between 3 and 65 years old, on calcareous, clay and call vermell soils. It shows a medium-high cherry red colour, violet rim and dense tears, clean and bright. On the nose it offers spiced red fruits, vanilla, cocoa and light pepper notes. On the palate it is luscious, fresh, long and persistent.
