Grapes are harvested under optimal conditions in autumn when the weather is mild, allowing for a favorable harvesting process. The grapes undergo the “soleo” process, where they are sun-dried to concentrate their sugars before being gently pressed. The resulting must is fortified to 15.5%, and then spends around 9 years in American oak casks under the traditional Solera system. This maturation process gives the wine a distinctive sensory profile. On the palate, it presents a velvety, unctuous texture, where acidity balances the sweetness of the wine. On the nose, rich aromas with notes of dried fruits, such as raisins and dates, are appreciated. The color of the wine is ebony, and its legs appear broad, indicative of its density and complexity.
