Vermouth Canasta is a creation of Bodegas Williams & Humbert, a historic winery founded in 1877 in Jerez, Spain. This vermouth is made from Palomino and Pedro Ximénez grapes, following a maceration process in large stainless steel containers. During this process, the ingredients blend and release their complex aromas and flavors. After maceration, fermentation is stopped with a small addition of distilled alcohol, and sugar is added to balance the taste. The result is a dark amber drink with a distinctive sweet-sour flavor, enriched by herbal, spicy, and citrus notes. The winery is recognized for its use of the traditional solera and criaderas system and its commitment to sustainability, such as implementing solar energy.
