The El Grifo Winter Harvest White Wine is a testament to the ingenuity and adaptability of viticulture on the island of Lanzarote. This single-varietal volcanic Malvasía wine is made from grapes harvested from five selected parcels located in regions such as Playa Quemada and Geria. The winter harvest, an uncommon technique, is done by hand in 18-20 kg boxes to ensure grape quality. Fermentation with whole bunches and without destemming allows for the extraction of unique nuances that include saline notes characteristic of the area.
