Arrayán made its debut in the Méntrida DO with this wine, a white made with the variety that gives it its name from old vineyards in Almorox (Toledo). It is made by treading whole clusters in small tanks. It then undergoes cold maceration for two days. It is pressed and fermented in barrels.
Arrayán wines seek to express the different terroirs and their typicity. From the vineyard to the winery, all processes are carefully taken care of: organic cultivation, manual harvesting, selection of clusters, spontaneous fermentations of the grapes (without the addition of enological products), and aging tailored to the needs of each variety, in order to achieve maximum purity and personality. The result is fine and elegant wines.
