Production and aging

Allende is made with the Tempranillo variety. Regarding its production, the harvest and selection were done manually. The grapes were destemmed and not crushed. A pre-fermentation maceration at 5ºC was carried out for 6 days. The fermentation was controlled at 28ºC for 10 days in stainless steel tanks, with three daily pump-overs. After fermentation, a second maceration with the skins is done for 16 days. The wine is then gravity-fed and undergoes vertical pressing before malolactic fermentation, which takes place in stainless steel tanks.

Finally, Allende ages for 14 months in French oak Bordeaux barrels. The wine is racked every 4 months.

Tasting notes of Allende

• Appearance: Allende has an intense cherry color with purple hues.
• Nose: Fruit sensations (blackberry, blueberries, black fruits) predominate over perfectly integrated wood aging tones, providing hints of cedar and tobacco.
• Palate: In the mouth, it is serious and lively with power and great balance, wide and tasty combining fruity freshness and the elegant structure of an aging wine.

Pairing

Allende is ideal to accompany big game, game birds, grilled red meats, stews, roasts, cured cheeses and Iberian acorn-fed ham. It is recommended to decant before consuming and serve at a temperature between 16 and 18ºC.
