Located on the slopes of Peñafiel, Pago de Carraovejas was the first in the Ribera del Duero to use Cabernet up to 25%, to use French oak for its barrels, and to use drip irrigation. In 1991 it made its first harvest.
Pago de Carraovejas Crianza is a blend of 79% Tinto Fino, 12% Cabernet Sauvignon, 9% Merlot varieties. The grapes for Pago de Carraovejas Crianza are selected in the field by the vineyard staff throughout the plant's vegetative cycle. They are hand harvested and brought to the winery in small vibrating stainless steel trailers, which will pamper every movement of the grape. Destemmed without crushing, in very wide tanks for better extraction of flavors, aromas, and color.
Aged for 12 months in French and American oak barrels. Clarified with natural egg white.
Pago de Carraovejas Crianza is ideal to pair with dishes such as suckling pig, roasted kid, and Iberian pork tenderloin.
It is recommended to consume at a temperature between 16 and 18ºC.
