Victorino is a single varietal of Tinta de Toro, with the Toro Designation of Origin.
Produced by the Teso La Monja winery owned by the Eguren brothers who, after selling Numanthia, founded this winery with the aim of making the best Tinta de Toro wines.
Victorino is a 100% Tinta de Toro single varietal. The grapes are harvested manually with a very careful selection, choosing only fruits that are in optimal condition. In the winery, they undergo a second selection on a sorting table. The grapes are destemmed and undergo a very gentle crushing.
During fermentation, the wine undergoes light pump-overs and is also foot-trodden. Fermentation lasts 8 days at a temperature of between 26-28ºC. Subsequently, maceration takes place with the skins for 23 days. Finally, malolactic fermentation lasts 20 months and takes place in new French oak barrels with rackings every four months.
Victorino is ideal to pair with aged cheeses, cooked dishes, stews, venison, duck, and wild boar.
It is recommended to consume this red wine at a temperature between 16 and 18ºC.
