Abadal Nuat undergoes aging for 10 months on lees. These inactive yeasts, resulting from alcoholic fermentation, are enriched with a selection of other yeasts generated during the production of Abadal Picapoll, another distinguished wine from the winery. Through this technique, Abadal Nuat is shaped, acquiring body, smoothness, and enriching complexity.
