Oloroso Generous Wine Dry Alfonso is made 100% with the Palomino Fino grape variety and has a Jerez Designation of Origin (D.O.).

González Byass Wineries were founded in 1835 and currently have 1,844 hectares of vineyards spread throughout Spain. Their wine production satisfies both national and international palates.

Production

The harvest that takes place in the "Marco de Jerez" is of utmost importance for the production of Oloroso Alfonso Dry Sherry since autumn and winter in this area are mild, while spring is characterized by high temperatures and flowering. In summer, there is not excessive heat, but there are multiple days of dew, favoring abundant production, so the harvest begins in August.

The Palomino grapes are gently pressed, and the must obtained from this first pressing is known as "yolk must," being the most delicate and elegant.

After fermentation, classification, and fortification, the wine enters the "solera," where it will remain for approximately eight years in American oak barrels.

Jerez wine ages by being in total contact with the air, allowing for complete oxidation and resulting in the most delicious and delicate sherry called Oloroso Alfonso Dry.
