Allende is the most well-known wine from the winery, combining elegance and complexity and demonstrating it with its balsamic aromas and round tannins. Despite producing wine since 1995, the history of the winery dates back 30 years, when Miguel Ángel de Gregorio took over the historic vineyards of Marqués de Murrieta, the first wine producer in Rioja.

Production and aging

Allende is made with the Tempranillo variety. Regarding its production, the harvest and selection were done manually. The grapes were destemmed and not crushed. A pre-fermentation maceration at 5ºC was carried out for 6 days. The fermentation was controlled at 28ºC for 10 days in stainless steel tanks, with three daily pump-overs. After fermentation, a second maceration with the skins is done for 16 days. The wine is then gravity-fed and undergoes vertical pressing before malolactic fermentation, which takes place in stainless steel tanks.

Finally, Allende ages for 14 months in French oak Bordeaux barrels. The wine is racked every 4 months.
