All the production of the anchovies from Casa Santoña is carried out using completely traditional and artisanal methods, dedicating the necessary time to each fillet to reduce the salt concentration and remove all the bones, ultimately achieving the best flavors from the catch. The finished anchovies are packed in neutral oil (sunflower) for preservation, and if desired, can be served with a few drops of suitable olive oil.
