As soon as the Palomino grapes reach the winery, they are gently pressed using a tyre press without crushing the stem, seeds or skin. This must comes from the first pressing is called "yolk must" and is considered most elegant and delicate. The Grapes of Pedro Ximenez will be pressed separately. After fermentation in stainless steel tanks and classification, Palomino wine is fortified to 18%, and Pedro Ximenez to 15.5%. Each wine enters a different solera, in American oak casks, to age in contact with the air. After an average of 12 years, the wines are mixed, entering the Solera apostles, where they will continue for 18 years, following the traditional Solera system.
Apostles Cut Stick 30 years can be described with a Amontillado in the nose, and like a odorous in the mouth. In addition, in this cut stick we are added the influence of the grape of Pedro Ximenez. Dark Amber is its color, and it concentrates fruity aromas. It is a complex wine, homogeneous and intense, with notes of caramel and ripe wood, with a long and smooth finish. More than 30 years of aging give this old stick a spectacular concentration.
