The zamburiña is a bivalve mollusk, with a shell of about 3 to 5 cm and a dark violet tone, commonly used, for example, as a filling for Galician empanadas. Although smaller in size than scallops, its flavor is much more concentrated and delicious, leaving a sweet and pleasant sea aftertaste. Its texture is tender and its color is grayish.
In Arlequín preserves, we offer you this delicious delicacy in a typically Galician preparation called Salsa de Vieiras, whose typical ingredients are: tomato, oil, onion, and white wine. This sauce is added to the canned zamburiñas and semi-cooked.
They should be stored in a cool place without the need for refrigeration. They can be consumed as they are or briefly heated to let their flavor take center stage again.
