Vineyard and winemaking
The grapes come from the Las Escaleras parcel, known as Finca de los Locos, located in Baños de Ebro at 520-530 meters above sea level.
The vineyard, planted in 1981, is cultivated in a goblet shape following organic practices on a sandy-limestone soil that gives freshness and minerality to the wine.
The harvest is done manually, with a first selection in the vineyard and a second one in the winery. After destemming, the grapes are gravity-fed into stainless steel tanks, where daily punch-downs and a short maceration of one to two days take place. The malolactic fermentation occurs spontaneously, mostly in tanks and 15% in new barrels.
The wine ages between 12 and 16 months in 500-liter barrels and French oak foudres before being bottled without stabilization and with a very gentle filtration.
