The small plots of goblet-grown vines in Baños de Ebro provide the perfect conditions for the Viura grape to grow. The poor chalky clay soil adds a unique complexity to the grapes, conveying their earthy character and balanced expression.
At Bodegas Mauro, the cultivation of Baynos follows organic practices in the process of certification. Biodynamic techniques are applied and animal traction is used, preserving harmony with nature and ensuring an authentic and sustainable wine. Carefully limited yields of 3,500 kg per hectare guarantee the concentration of flavours and aromas in each bottle.
The making of Baynos is an art in itself. Alcoholic fermentation is carried out with indigenous yeasts, adding a unique character to the wine. In addition, 20 months of ageing in French oak barrels gives elegance and smoothness to this exceptional wine. The result is a limited production of only 2,882 bottles, each one of them a jewel for lovers of good wine.
