Blue cheese from Pria, a specialty made with three types of milk.
In its production, pasteurized sheep's milk is used at 45%, cow's milk at 50%, and goat's milk at 5%. Additionally, to give it more creaminess, goat and sheep whey cream is added.
This Three Milk Cheese is gently smoked and aged for a minimum of two months in a cold and humid environment to allow for external mold growth.
Its appearance is similar to Gamoneu cheese, with a natural gray-brown rind and a semi-hard, yellowish paste that darkens where it contacts the rind, with blue veins throughout. It has scattered irregular eyes of not very large size.
