Our cheese is changing its name but not its taste! Le Severac Authentique is becoming Le Salerac. The 2021 season has already begun, and our first cheeses are being made and matured. Le Salerac, 100% raw milk from Salers cows, is now available for pre-order. The first tommes ripened between 3 to 5 months will be ready to be delivered to you from May 25.
Our cheese remains additive and preservative free. Using the ancestral know-how of Auvergne, the Salers milk curdles in a wooden jail. It is this unique process, which gives an authentic taste to each daily production. Its small tomme format, makes it an ideal cheese for 6 to 8 people.
