Cava Mirgin Exeo is a Qualified Cava made by Alta Alella with 60% Pansa Blanca - 40% Chardonnay.
Made with a selection of the best organic grapes from Paraje Vallcirera: Pansa Blanca and Chardonnay. The characteristics of the vintage are extracted through different types of elaboration, combining fermentation and maceration in barrels (2nd and 3rd year), and then rigorously applying the Méthode Traditionnelle Champenoise with an optimal ageing period according to each vintage. It is sold freshly disgorged (by hand). This product is only produced in exceptional vintages.
The Gran Reserva cavas are aged for a minimum of 30 months; some collection cavas are aged for up to 10 years. All the grapes are organic, and all the bottles are sold freshly disgorged. A passion for cava that has been awarded multiple international prizes.
Appearance: Intense yellow colour with golden reflections.
Nose: Intense, floral. Aromas of ripe fruit, covered with toasted notes characteristic of its fermentation and ageing in oak.
Mouth: Flavours marked by minerality and unctuousness, recalling aromas of ripe fruit and toast. Cava with a well marked acidity and very good aromatic complexity. Integrated effervescence and long and very persistent aftertaste.
