The grapes come from the vineyards owned by the winery in the municipality of Grávalos, south of Monte Yerga in the foothills of the Iberian Mountains at an altitude between 700 - 800 meters above sea level. A very high area where fresh wines with low alcohol content are obtained, with very fine and elegant aromas. The Viura variety is harvested in the first two weeks of October. The grapes are harvested by hand, selecting the grapes, avoiding any grapes that have deteriorated or do not meet the quality required to produce our cavas
The free-run must obtained by gentle pressing will be used to make our cavas. The must will undergo the first fermentation in stainless steel tanks at a low temperature of 14ºC. At the beginning of spring, once the wine has been cleaned, it will undergo a second fermentation in the bottle, where it will be aged for at least 36 months
Lemon yellow with steely reflections. Fine bubble that forms a small rosary of slow evolution. Great intensity of pleasant aromas of the variety and bottle aging, discover fruity aromas (apple). Pleasant in the mouth, with a soft attack of acidity and a very well integrated bubble, with a light passage and a good final impression. Apple aftertaste
Cold and hot starters, oysters, game, fresh foie gras, caviar. It goes very well with most dishes as long as there are no very strong seasonings such as paprika.

In the glass, it presents a bright lemon yellow color and a fine, persistent bubble. On the nose, elegant aromas of white fruit and subtle aging notes stand out. On the palate, it is fresh, delicate, and with a long finish reminiscent of green apple.
