Red Wine Clos de Lôm Garnacha: this wine is made with grapes of the Garnacha variety from vineyards of more than 40 years old in goblet and dry land with calcareous-sandy soils of continental climate with influences of Mediterranean climate.
The harvest is done manually, it is received early in the morning at the winery and processed quickly with the latest technology. The grapes are destemmed to remove the stems, crushed to obtain the must, and vatted in small stainless steel tanks. It is then cold macerated for a minimum of 5-6 days using a compressed gas pumping-over system to avoid losing aromas in the process. Fermentation is carried out at a controlled temperature of 26º C. to devat through a Decanter to macroxigenate and clean the excess lees. The end of fermentation is done at a temperature of 22ºC and malolactic fermentation is carried out in the tanks with a selection of bacteria to convert malic acids into lactic acids, which round the wine and make it more pleasant.
