The Comtes de Champagne Grands Crus Blanc de Blancs , the most perfect expression of the Taittinger house style, is a cuvée millésimée, made from 100% white grapes from the vines of the 5 Grands Crus de Chardonnay vineyards (Avize, Chouilly, Cramant, Oger, Mesnil-sur-Oger).
This cuvée is made only from the wine of the first pressing. A small proportion of the blend (5 %) is aged in new oak barrels, thus enhancing the harmony of the delicate toasted notes.
With these chardonnays, which are the jewel of the land, Taittinger is patient, as the Comtes de Champagne Blanc de Blancs waits 10 years in the limestone galleries of Saint-Nicaise before it can be released and delight the palate.
Its bright golden hue with green reflections is furrowed by a string of fine, constant bubbles, characteristic of Chardonnay.
The nose, an authentic expression of the limestone soil from which it originates, offers a very light impression and delicate tension. At once chiselled, complex and well-preserved, the nose of this 2008 vintage transports us to aromas of pear, lime, white pepper and orange blossom, skilfully combined with light toast and liquorice notes.
On the palate, the attack is lively, with a great aromatic finesse that transports us to a constant tension and minerality. The sensation is then of a complex and smooth freshness that is noticeable, a perfect balance between ripeness and roundness.
The finish is a good balance between finesse and concentration: aromas of white fruits, grapefruit and mint on a delicate honeyed finish.
