Elaboration and Aging
Contino Reserva is a blend of the grape varieties Tempranillo (85%), Graciano (10%), Mazuelo (3%), and Garnacha Tinta (2%). After destemming, the grapes fermented in 12,000-liter stainless steel tanks at a temperature of 28-30ºC. After a maceration period of 15 to 20 days, the wine underwent malolactic fermentation, which refined it to the appropriate acidity level.
It was then transferred to American and French oak barrels for two years of aging, followed by an additional two years of bottle aging in the cellars before being released to the market.
Tasting Notes of Contino Reserva
- Appearance: Contino Reserva has a garnet color, very dense and covered.
- Aroma: Smoky and fruity, both red and black fruits, notes of cloves.
- Palate: The wine is still tannic, but with great nobility, long, and very fresh.
Pairing
Contino Reserva is ideal to accompany cured meats, aged cheeses, roasted red meats, and grilled red meats. It is recommended to decant before consuming and serve at a temperature between 16 and 18ºC.
