Behind this bottle hides an incredible legend : the legend of Tokaj. A vineyard with centuries of history, today defined as the most recognized worldwide , the elaboration of this wine, also known as"tear wine"involves a meticulous elaboration that can only be carried out in very special conditions. The development of"Botrytis cinerea"isnecessary for this elaboration. The process remains the same as it was hundreds of years ago. Three baskets of 25 Aszú noble berries , i.e."3 puttonyos", are added to a barrel of must. These berries are macerated until they double in size and are pressed. Fermentation takes place in new Hungarian oak barrels , a process that can last up to four weeks. Finally, the aging is completed in 136 and 200 liter barrels for at least 2 years and bottled for 1 year. A vibrant and velvety wine thanks to its acidity.What happened during the 2016 vineyard cycle. It was a long and cold winter followed by fresh rains in the month of February. A dry and warm spring led to an early bud break in the Furmint vineyard. Flowering took place in the first days of June and thanks to a dry season, fruit set was perfect. Ripening was early and rapid , favoring the vineyard, which would later give this wine a balanced aroma and acidity. To end this cycle, a rainy September contributed to the high quality of the Aszú grapes.
