The Caballo Loco Grand Cru Limarí is an exceptional Chilean Wine that reflects the essence of the Limarí Valley, one of the most recognized wine regions for its distinctive character. This valley benefits from a strong maritime influence: every morning, the coastal fog known as Camanchaca covers the vineyards until the sun emerges from the mountains, providing freshness and balance to the grapes. With very low annual precipitation, technified irrigation allows the roots to penetrate deeply into mineral-rich soils, giving the wine an unmistakable mineral profile and great personality.
The vinification of this Chilean Wine follows traditional processes with great care. The clusters are harvested and selected by hand, then gently destemmed by hand to preserve the quality of the fruit. Fermentation takes place in open tanks, with manual management of the grape cap to achieve a delicate and complete extraction. The temperature is controlled between 28 and 30°C, followed by a post-fermentation maceration of 21 days that adds structure and complexity. Subsequently, the wine ages for 18 months in French oak barrels, adding elegance and depth.
In tasting, it presents a dark garnet color with violet reflections. The nose is intense and complex, with classic Syrah notes such as black pepper, olives, and ripe black fruits. On the palate, it offers great volume, enveloping texture, fine tannins, and a long and persistent finish.
This Chilean Wine is meant to be enjoyed now, although it can be aged for up to 8 years, reaching greater refinement over time. Ideal for pairing with juicy meats, lamb, game birds, duck, rabbit, and even fatty fish, served at a temperature of 17°C.
