Enrique Hernández, professor of microbiology at the University of Valencia, highlights its healing and antioxidant properties, and also points out that the vitamin E in horchata reduces the harmful effects that bad cholesterol (LDL) has on our bodies. He explains that its nutritional value is mainly due to the amount of oleic acid it contains and assures that "it is considerably higher than that of olive oil."
