HARVEST REPORT After a fairly dry year 2015, winter 2016 continued without rainfall. We face the beginning of spring with a fair sprouting.
It was the month of April that brought us abundant rainfall and frost-free so the vine recovered the vigor it needed. In the first week of September we were attacked by a heat wave that caused a stress on the plants, so the harvest was delayed until it reached a level of normal photosynthesis that brought us closer to full maturation.
The end result has been fine wines, somewhat thinner than we are used to but with good wicker to evolve well in the bottle as happened in the 2003 vintage. TASTING NOTES Colour: Impeccable cleaning and shine, of high intensity and purple color with cardinal edge, deep and opaque.
Nose: Varietal aromas (lilac, blackberry and coriander) and undergrowth (pine bark and leaf litter), very complex in terms of aromas.
The aging in barrels gives it light dairy notes, a cigar box and fine cabinetry. Elegant and suggestive.
Taste: Structured but with very fine tannins and more polished, greasy, it does not attack the papillae in its passage in the mouth, it is soft and fine. Very elegant.
Pairing: Aged sheep and goat cheeses. Wood-fired lamb and kid meats. Interesting pairing with grilled duck magret. Tripe in Madrid and botillo.
