Finolis is a sherry wine produced by Williams & Humbert with the Palomino variety.

The Williams & Humbert winery is launching Finolis, a still wine with organic ageing. The special feature of this wine is that it is made from overripe Palomino grapes. This grape comes from the old vines of the Dos Mercedes vineyard in Pago de Carrascal. The over-ripening of this grape, first on the vine and then through the sun, makes it reach more than 14 degrees in a natural way.

Once destemmed, the grapes are vertically pressed to obtain a must with a yield of around 50%. This must is fermented in butts and reaches 14.68º without the need for fortification.

After fermentation and devatting, static ageing begins. Once fermented, the wine is transferred to 600-litre butts, which are filled to 80% of their capacity, which favours the formation of the veil and spontaneous biological ageing.

It is a very special wine, due to its particular production process: from the Palomino grapes from old vines that reach over-ripeness naturally, first on the vine and then with the sun, to the manual pressing, the fermentation in butts and its static ageing under the veil of flor. All this makes Finolis a different and very special wine.
