The Generous Wine Palo Cortado Apostles is made up of 87% Palomino variety and 13% Pedro Ximénez variety, and it has a Jerez Designation of Origin.
The harvest carried out in the "Marco de Jerez" is of utmost importance for the production of Jerez Wine Apostles Palo Cortado, when the grapes arrive at the winery, they are carefully pressed without crushing the stems, seeds, and skin. The must obtained from this first pressing is known as "yema must," being the most delicate and elegant.
The aging of the must is carried out using the system of "criaderas" and "soleras" in American oak barrels. After fermentation and fortification, each wine ages in separate "soleras" where they mature before being blended. Then they move to the "solera" of Apostles, where the wine will remain for over 30 years.
