The wine begins its elaboration as Vi de Glass, which has been made since 1997, previously under the name Vi de Gel. The process has varied over time based on one premise: the extraction of the essence, which represents the noblest part of the grape. Currently, and after years of research, it is made with a prototype powered by liquid nitrogen, in the same way that the most prestigious avant-garde kitchens use nitrogen to create the most sublime gastronomic proposals. In order to achieve the frizzante result, a second fermentation of part of its sugars is carried out. This is a sweet chilled wine, a new legal category that has recently been incorporated into the Penedès Designation of Origin.
