Palo Cortado - Sherry Gama Premium: Wine made with 100% Palomino grape selected from the Pago de Macharnudo (Superior Jerez). It combines the subtlety of Amontillado with the roundness of Oloroso. It is one of the wines in Harveys' Premium Range, whose Solera was established in 1906.
Harvey's Palo Cortado is a fortified wine produced by Emperador Distillers, one of the main wineries in Spain. This wine is the result of a meticulous and carefully controlled production process that begins with hand-selected grapes from the oldest and most prestigious vineyards in Andalusia.
The base wine is made from Palomino Fino grapes, which are pressed and fermented in American oak barrels. After fermentation, the wine undergoes an aging process in soleras, a traditional technique of blending wines used in Jerez. During this process, the wine is transferred from barrel to barrel, allowing it to blend with older wines and acquire greater complexity and depth of flavor.
Palo Cortado is a very special and rare wine that is produced when the base wine undergoes additional aging in oak barrels that previously contained Oloroso wines. During this process, the wine acquires a unique and complex flavor that combines the characteristics of Fino and Oloroso.
