It is a cow's milk based cheese of about 150g with 40% fat on finished product.
Brillat Frais is part of the bloomy-rind soft cheese family.
From its slightly lactic smell comes a creamy, unctuous taste slightly enhanced by a sweet touch.
The white colour of the rind leans towards that of the butter inside.
Tasted all year round but its optimum season is from April to October.
This cheese is a triple cream cheese that is soft on the palate and is best eaten young and fresh.
