This is a cheese made from approximately 90g of cow's milk with 40% fat content in the finished product. Brillat Frais belongs to the family of soft cheeses with bloomy rind. Its slightly milky smell is followed by a creamy and smooth taste, slightly enhanced by a sweet touch. The white color of the rind resembles that of butter inside. It can be enjoyed all year round but its optimal season is from April to October. This cheese is a soft triple cream on the palate, best eaten young and very fresh.
